Heat the oil: In a large skillet, heat about 1/4 inch of oil over medium-high heat until shimmering. Fry the pancakes: Add about 1/4 cup of batter to the hot oil per pancake. Flatten slightly with a spatula. Fry for 3 to 4 minutes on each side until golden brown and crispy.
