Ingredients

  • 2–3 medium yellow squash, sliced into ¼-inch rounds

  • 2 tbsp olive oil

  • ½ tsp garlic powder (or 1 clove fresh garlic, minced)

  • ½ tsp Italian seasoning

  • Salt & black pepper, to taste

  • ½ cup freshly grated Parmesan (the real stuff melts best)

  • Optional: breadcrumbs or panko for extra crunch

  • Optional garnish: fresh parsley or basil
