2.2. Preparation of the tomato sauce
Sauté : In a saucepan, heat the olive oil and add the chopped onion and crushed garlic. Sauté until the onion becomes transparent.
Tomatoes : Add the peeled tomatoes, mashing them with a fork. Add salt, pepper, and fresh basil. Cook over medium heat for about 20-30 minutes, until the sauce thickens.
2.3. Preparation of the filling
Ricotta : In a bowl, combine the ricotta, egg, grated Parmesan, salt, and pepper. Mix well until smooth.
