Twice-Baked Potatoes

Ingredients (serves 4)

  • 4 large russet potatoes

  • 2 tbsp olive oil

  • 4 tbsp butter, softened

  • ½ cup sour cream (or Greek yogurt)

  • ½ cup milk or heavy cream (adjust to taste)

  • 1–1½ cups shredded cheese (cheddar, Monterey Jack, or a mix)

  • 4 slices bacon, cooked and crumbled (optional)

  • 2–3 green onions, sliced

  • Salt and black pepper, to taste

Instructions

  1. Bake the potatoes
