Start by cleaning and washing the potatoes.
Next, and this is crucial, slice them carefully.
For a perfect cut, ideally use a mandoline or a slicer.
If you don’t have one, use a sharp knife to cut medium slices,
no more than one centimeter thick. Each slice is then cut into sticks.
Soak the fries in a bowl of cold water.
Leave them for 20 minutes to remove excess starch. Then remove them and dry them with a clean tea towel.
Next, pour a generous amount of oil into a frying pan.
Heat the pan and add the potato sticks.
Fry them for about 5 minutes, until golden brown.
Feel free to add a few cloves of garlic.
This will make them even more delicious! Remove them from the pan, place them on paper towels, and let them cool slowly.
Before putting them back in the very hot oil. A few minutes is all it takes.
Watch them, and you’ll already notice the perfectly even browning.
(Be careful not to let them burn!) Once cooked, remove them
