Ingredients
Base Recipe:
3 ripe bananas, mashed (about 1½ cups)
Bread
½ cup (115g) unsalted butter, melted and slightly cooled
¾ cup (150g) granulated sugar (or brown sugar for deeper caramel notes)
1 large egg, room temperature
1 tsp pure vanilla extract
1½ cups (190g) all-purpose flour
1 tsp baking soda
½ tsp fine sea salt
½ tsp ground cinnamon (optional, but adds warmth)
Optional Add-Ins:
½ cup chopped walnuts or pecans
½ cup semi-sweet chocolate chips
Or a mix of both!
Instructions
1. Preheat & Prep
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line it with parchment paper (leaving overhang for easy removal).

2. Mix Wet Ingredients
In a large bowl, mash the bananas until mostly smooth (a few lumps are fine).
Stir in the melted butter, sugar, egg, and vanilla until well combined and glossy.
3. Combine Dry Ingredients
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
