Ingredients (Serves 4):
– 4 salmon fillets (about 1 inch thick)
– Salt and freshly ground pepper
– 2 teaspoons olive oil
– 2 cloves garlic, minced
– 1/4 cup (65 ml) chicken broth
– 2 tablespoons fresh lemon juice
– 3 tablespoons butter, divided + 1 teaspoon butter
– 1/2 teaspoon honey
– 2 tablespoons fresh parsley
– Lemon wedges
Preparation: Step 1: In a small saucepan, add 1 teaspoon of butter and heat over medium heat. Add the garlic and sauté for 1 to 2 minutes.
Step 2: Add the chicken broth and lemon juice. Let the sauce reduce by about half (about 3 minutes).
Step 3: Add the butter and honey and whisk until well combined. Set aside.
Step 4: Season the salmon fillets well with salt and pepper.
Step 5: Heat the olive oil over medium-high heat in a large saucepan.
Step 6: Add the salmon and cook for about 4 minutes on one side and 2 to 3 minutes on the other.
Step 7: Serve with a generous drizzle of the butter sauce. Garnish with parsley and serve with lemon wedges.
